Developing the Future Food Campus

In mid-2023, with support from EIT Food, Greengrounds embarked on a mission to explore sustainable urban food production in Hamburg. Collaborating with Lettus Design, we introduced an innovative design game that engaged citizens and decision-makers. This interactive tool utilized spatial data to highlight the city’s food production and consumption gaps and identified potential areas for development.

The game workshops fostered a shared vision among Hamburg’s key stakeholders—including government representatives, the Chamber of Commerce, entrepreneurs, and investors—culminating in a collective agreement to pursue high-tech food production in the harbor area. This initiative is now moving towards the creation of the Future Food Campus, envisioned by our partner FoodWorks Ev, led by Eva Keretic. The campus will feature a climate-neutral vertical farm and a bio-fermentation system for alternative protein production, utilizing an innovative waste-to-energy model.

Hamburg was selected for this groundbreaking project for its unique position as a city-state with its own government and a population of over 1.8 million, with a total of 5.4 million in metropolitan region. The city’s harbor, facing economic pressures, presents an ideal locale for rejuvenation with innovative ideas. Furthermore, Hamburg’s well-organized food cluster, comprising over 4500 companies, offers a robust foundation for public-private partnerships, aiming to enhance self-sufficiency and establish the city as a leader in high-tech food production.

Current Progress and Upcoming Milestones

We have successfully concluded the discovery phase and established consensus among decision-makers on the future direction of the food ecosystem. Currently, we are aiding Eva Keretic in advancing the Future Food Campus project, focusing on securing funding for site selection, master planning, and construction.

Conduct a full feasibility study, providing CAPEX estimates and an operating concept.

Develop a basic engineering concept with refined CAPEX estimates and detailed operational plans.

Complete detailed engineering and realize the construction of the campus.

Strategies and Approaches

The game-based design workshops were instrumental in understanding realistic scenarios for Hamburg’s food ecosystem, giving insight into stakeholder dynamics and barriers. Our ongoing focus is to support the realization of the Future Food Campus in the harbor area, working closely with:

Future Directions and Expected Outcomes

The development of the Future Food Campus aims to integrate another urban food hub within a metropolitan area, demonstrating the scalability and sustainability of localized food production systems. This project will serve as a blueprint for future urban agricultural initiatives, showcasing how cities can effectively manage local food production to enhance urban food security.
